What do you do after eating too much chocolate over Easter? Well, if you’re me, you go and make really chocolatey cookies.
In a way, it does make sense – you can use up leftover Easter eggs and bunnies. At least, that’s the reasoning I followed as I tucked into my second cookie. It’s a complete chocolate overload – I crammed the cookie dough with chocolate chips, the pulverised remains of an Easter bunny and M&M’s and then I dolloped chocolatey blobs of Nutella in the middle. I’ve been trying my hand at making up my own baking recipes and was pleased with the way these cookies turned out.
These are a variation of my peanut butter and chocolate centre cookies. They do take a bit more effort to put together as Nutella is more runny than peanut butter, but it’s worth it if you don’t mind getting your hands a bit messy!
So, if you have some leftover Easter chocolate, or if you need a big chocolate hit, this is a recipe worth trying. Enjoy!
Nutella, M&M’s and chocolate chip cookies
Ingredients
125g butter, softened
1 C brown sugar
1 egg, lightly beaten
1 tsp vanilla essence
1 1/2 C plain flour
1/2 tsp baking powder
pinch of salt
70g mini M&M’s (2 x 35g tubes)
3/4 C chocolate chips
Nutella
Method
Preheat the oven to 180 degrees Celsius. Line a cookie tray with baking paper.
Place butter and sugar in a bowl and beat until light and creamy. Add egg and vanilla essence and stir to combine. Stir in the sifted flour, salt and baking powder until just combined. Fold through the chocolate chips and M&M’s.
Place a heaped tablespoon of the cookie dough into your hand and flatten to a thick disc. Dollop a teaspoon of Nutella in the middle. Fold up the sides of the dough around the Nutella to form a bowl shape. In your other hand, flatten enough dough into a disc shape to cover the top of the cookie. Place on top of it and then press the sides together.
If any holes appear, just patch them up with a bit of extra dough. Place on the baking tray. Leave a bit of space between the cookies for spreading.
Bake for 12-15 minutes. Allow to cool slightly on the tray for 5-10 minutes before moving them to a wire rack.
