Cheat’s tahu goreng

Tahu goreng is a fried tofu, cucumber and peanut salad that is popular in South East Asian countries like Malaysia.  My version is definitely NOT authentic but is still fresh and tasty.  The differing textures and temperatures make every mouthful interesting and it’s a great side for any spicy meal.

Cheat’s tahu goreng



150g packet of tofu puffs

1 small cucumber (or 1/2 telegraph cucumber), grated or peeled into ribbons

1 small shallot, finely sliced

1 generous handful bean sprouts

3 Tbsp roasted and chopped peanuts

2 Tbsp roughly chopped coriander

Thai sweet chilli sauce



Cut each tofu puff in half and then bake in the oven at 200 degrees Celsius for 5-10 minutes on each side, until the tofu is crispy.

Arrange on a plate, then pile the bean sprouts, cucumber and sliced shallots on top.  Squirt as much chilli sauce on it as you like, then garnish with the peanuts and coriander.  Serve  straight away.
